Why does blood sugar spike after meals?

Glucose rising after a meal is expected: you have added carbohydrate, and it takes insulin time to bring the level back down. What varies is the size and length of the spike. Refined carbohydrates and large portions tend to produce sharper rises, while protein, fat, and fiber slow digestion and soften the peak. After-meal readings usually crest about one to two hours after eating.

Small, repeatable changes flatten spikes for many people: pairing carbohydrates with protein or vegetables, keeping portions steady, and taking a short walk after eating, which helps your muscles pull glucose from the blood. On a GLP-1, spikes are often gentler because the stomach empties more slowly, so a meal arrives more gradually.

The way to learn your own responses is to check about one to two hours after a meal and tag what you ate. Over a couple of weeks the patterns emerge: which meals run high, which sit easy. Those are the ones worth adjusting, with your clinician's input if a pattern surprises you.
